4th of July weekend

I spent Friday night making chocolate cupcake bites for the barbecue at my mom's house - and when I say I spent Friday night making them I mean they took 4 hours plus the time to bake the cake.  Just look at these little beauties - I am so glad these things turn out so yummy with all the time they take.  The recipe makes between 50 to 60 cupcake bites depending on size.

We drove up on Saturday morning with these packed on ice because nothing was going to wreck these after all the time I spent on them.
I had to stop at Hobby Lobby when we arrived in town and then we went straight to my mom's house to help with the barbecue.  I made one more treat for the barbecue that was requested by my step-dad after he saw it on my Facebook page.......

We then ran to the Stadium of Fire with Brad Paisley and David Archuleta as the entertainers and one of the best firework shows around!
We got home after midnight - It was a long day!

Sunday was a little less crazy but we did go up to Park City and do some shopping.

Monday was the Provo parade - we only stayed for half of it - it was so humid!  They even cancelled the hot air balloons that morning due to the weather.  I did get to eat at Guru's in downtown Provo before we left - I love that place!
By the time we got home on Monday - I had no desire to see the city fireworks so we just stayed home and watched them from our house along with all the fireworks that people were letting off around the neighborhood - I love the new firework law for this year!

Peanut butter cookies

These cookies were delish and turned out great!  I have been making a lot of cookies from mixes so I was so glad when I took the time to make these from scratch and they turned out!

I used smooth peanut butter and half of the chocolate chips.
It made 3 dozen cookies and my husband and I ate them all!
I will definitely make these again!
